Bake the Number-One Banana Bread Recipe on the Internet (2)

This banana bread has been the most popular recipe on Simply Recipes for over 10 years. Thousands of people make it every day. Why?

Because it really is the best banana bread recipe, period. You can mix everything in one bowl, you can vary the amount of sugar or bananas. And the secret to its great flavor? Melted butter.

The beauty of this banana bread recipe is you don't need a fancy mixer! A mixing bowl, a fork to whisk the eggs, and a sturdy spoon to mix the batter are all you need. The sugar amount is flexible. The original recipe called for a cup of white sugar, but most people, including me, do just fine with 3/4 cup, and many are happy with 1/2 cup.

You can toss in a cup of chopped nuts, raisins, or chocolate chips if you want, or put the batter into muffin tins and make banana nut muffins instead. You can even go a step further and make chocolate banana bread.

I was given this banana bread recipe years ago from my friend Heidi H, who, many years before, had begged the recipe from a ski buddy’s mother—Mrs. Hockmeyer. Thanks Heidi!

The Backstory on the #1 Banana Bread Recipe

All these years later, we were curious to know more about who Mrs. Hockmeyer is, and how Heidi got her recipe in the first place. You can read all about it in this story.

The Best Loaf Pan for This Recipe

This recipe calls for an 8x4-inch loaf pan, which produces a tall loaf. The recipe will also work in an 8 1/2x4 1/2-inch loaf pan, producing a slightly shorter bread. Since the pan is a bit larger, the bake time is shorter: 47 to 57 minutes. A 9x5-inch pan will yield an especially short but still delicious bread; bake for 45 to 55 minutes.

How Our Readers Adapt This Banana Bread Recipe

  • Natalie: "I added a drizzle of maple syrup on top, plus some blueberries. I also switched out the flour for 1 cup of almond meal and 1 cup of gluten-free flour."
  • Roberta: "Added mini chocolate chips in batter and topped with crumb topping. Excellent!"
  • Eleanor: "I was out of eggs, so I substituted with a flax egg and it turned out perfectly! A tablespoon of flaxseed with 2 1/2 tablespoons of water and let rest for 5-10 minutes in place of the egg."
  • Monica: "The BEST banana bread recipe there is. I sprinkle demerara sugar on top before baking and it gives it a delicious crunch!"
  • Lisa: "I’ve been making this loaf for years. I always add a tablespoon or two of molasses, which gives a punchier flavor and darker color. I make it with chocolate chips for the kids and with cranberries and pecans for the adults."
  • LeRoy: "My wife, Mary created "Elvis Bread" and added half a bag of Reese's Peanut Butter Chips."
  • Marione: "THE BEST banana bread I’ve made. I added pineapple tidbits and substituted part of white sugar with brown sugar."

No need for a mixer forthis recipe! Clean-up is easy, too. If you want, you can mix everything in one bowl.

This recipe calls for an 8x4-inch loaf pan. If you are baking in an 8 1/2x4 1/2-inch pan, bake for 47 to 57 minutes. If baking in a 9x5-inch pan, bake for 45 to 55 minutes. Note that the larger pan size will produce a flatter loaf.

The best bananas to use for banana bread are those that are overripe. The yellow peelsshould be at least half browned, and the bananas inside squishy and browning.

Ingredients

  • 2 to 3 medium (7" to 7-7/8" long) veryripe bananas, peeled (about 1 1/4 to 1 1/2 cups mashed)

  • 1/3 cup (76g) butter, unsalted or salted, melted

  • 1/2 teaspoon baking soda (not baking powder)

  • 1 pinch salt

  • 3/4 cup (150g) sugar (1/2 cup if you would like it less sweet, 1 cup if more sweet)

  • 1 large egg, beaten

  • 1 teaspoon vanilla extract

  • 1 1/2 cups (205g) all-purpose flour

Method

  1. Preheat the oven to 350°F (175°C):

    Butter an 8x4-inch loaf pan.

  2. Mash the bananas and add the butter:

In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the melted butter into the mashed bananas.

Bake for 55 to 65 minutes at 350°F (175°C), or until a toothpick or wooden skewer inserted into the center comes out clean. A few dry crumbs are okay; streaks of wet batter are not. If the outside of the loaf is browned but the center is still wet, loosely tent the loaf with foil and continue baking until the loaf is fully baked.

  5. Cool and serve:

Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving. Slice and serve. (A bread knife helps to make slices that aren't crumbly.)

Wrapped well, thebananabreadwill keep at room temperature for 4 days. For longer storage, refrigerate the loaf up to 5 days, or freeze it.

FAQs

Can you use both baking soda and baking powder in banana bread? ›

As a general rule, you can use either baking soda OR baking powder in banana bread – both ingredients will make your banana bread rise. While baking soda will react with acidic ingredients in the batter to raise your bread, baking powder can leaven banana bread without the addition of acidic ingredients.

Can you put too much banana in banana bread? ›

Fight the urge to use more banana than called for in your recipe. Using too much banana could make your bread heavy and damp in the center, causing it to appear undercooked and unappealing. If you have bananas leftover, you can always freeze them for later use.

What is a substitute for oil in banana bread? ›

Canola oil is the most common choice used in most baked goods recipes, and this can be replaced one-for-one with a cup of applesauce. We love applesauce because it maintains a similar flavor to the original recipe, although it may have a more naturally sweet flavor to it!

Do I need to grease my pan for banana bread? ›

Grease Your Pan

For a picture-worthy loaf of banana bread, don't go overboard with greasing your loaf pan. Grease the bottom of the pan just ½ inch up the sides for a uniform loaf with a slightly rounded top. If you grease all the way up the sides of the pan, the loaf can sink, resulting in a flat top.

What happens if you don't put baking soda in banana bread? ›

Believe it or not, you can make a delicious loaf of banana bread without baking soda that is moist, soft, and fluffy with the help of baking powder! It won't rise quite as much, but it will still be absolutely delicious and tender packed with flavor from brown bananas and ground cinnamon.

What happens if you put too much baking powder in banana bread? ›

As Joy of Baking explains, a surplus of baking powder will turn your treat's flavor bitter. And that's not even the worst part. Adding in too much baking powder could cause your dessert to rise too fast and fall apart.

Why is the middle of my banana bread mushy? ›

Excess moisture (when compared to the recipe's dry ingredients) means a greater potential for banana bread to sink in the middle. Recipes that provide you with the exact amount of mashed bananas by measuring cup (e.g. 1 ½ cups of mashed bananas) or by weight (e.g. grams) tend to have fewer problems. Why?

How many bananas make 2 cups? ›

3 bananas: 2 cups chopped | 1-1/2 cups mashed. 4 bananas: 2-2/3 cups chopped | 2 cups mashed.

What is the disadvantage of banana bread? ›

Even though banana bread contains some important nutrients, such as potassium, most varieties remain high in added sugar, refined carbs, and overall calories.

How many bananas are in 1 cup? ›

Whether sliced or mashed, here's how to measure bananas for any recipe. I think it's absurd to measure such things by volume rather than weight. 3 bananas average size makes one cup.

What oil is best for homemade bread? ›

Choosing vegetable oil is the best option for baking moist, delicious baked goods. Canola oil, the most common vegetable oil used in baking, doesn't add a strong flavor. It allows your cake's flavor will shine through while still achieving a moist texture.

Why does my banana bread sink after baking? ›

Using too much or too little baking powder or baking soda in proportion to the other ingredients in your recipe could be the reason your banana bread collapses when cooling. To measure correctly, Quaker Oats recommends spooning the powder into the measuring spoon instead of scooping it.

Should I bake banana bread in glass or metal? ›

Is a Glass or Metal Pan Better for Baking? Since aluminum baking pans conduct heat more quickly and are easier to wash, store, and care for, I prefer them for baking in most circ*mstances. In fact, using glass or even ceramic baking pans for certain recipes, such as brownies or banana bread, may create adverse results!

Can I use parchment paper when baking banana bread? ›

Line an 8x5-inch loaf pan with parchment paper, letting the excess hang over the long sides to form a sling. Spray the inside with cooking spray. If using nuts, toast 1/2 cup chopped nuts in the oven for 10 minutes as the oven is pre-heating.

How long should you let banana bread cool before slicing? ›

The Importance of Keeping It Cool

Once the banana bread is done, it's necessary to let it sit in the baking pan for about 15 minutes and then transfer it to a plate where it will sit for a while longer. Due to the caramelized sugar, it's best to wait for the loaf to cool properly before cutting into it.

What happens if you use both baking soda and baking powder? ›

Combining the two leavening agents produces a biscuit that is both light and tangy. In baking as in life, it's all about balance. Many recipes need both kinds of reactions to achieve the intended overall balance of flavor and texture, which is why you'll often see both baking soda and baking powder in a recipe.

Do you need both baking soda and baking powder in muffins? ›

If baking soda is the only leaven called for in the muffin recipe, you'll need to find a substitute. Since we suspect baking powder is readily available, we suggest using 1 teaspoon (5 ml) baking powder for each 1/4 teaspoon (1 ml) of baking soda suggested.

Does baking powder or baking soda make bread fluffy? ›

Baking soda changes the texture of baked goods by causing a batter or dough to spread, while baking powder produces light, fluffy texture. Some recipes may call for baking soda or baking powder on their own, while others may require both ingredients to create the ideal balance for great texture.

What happens if you accidentally use baking soda instead of baking powder? ›

If you accidentally add baking soda instead of baking powder to baked goods, they won't rise because there is not enough acid. To fix this, add about one tablespoon of white or apple cider vinegar for every half teaspoon of baking soda to the liquids before mixing with the dry ingredients.
