Easy Meringues Recipe

There are a bunch of things that I have always wanted to do in life.

I won’t be as dramatic to say they are a bucket list…

I won’t think I missed out on life if I didn’t get to do them…

BUT if they happen, then it’s definitely a life bonus.

Here’s the short list:

First, I have always wanted to have a Brady Bunch moment. Most specifically the moment where the Bradys end up in court due to a fender bender where the other driver claims he was seriously injured because of Carol’s reckless driving. Mike Brady knew he was faking an injury and decided to expose the guy by throwing a briefcase on the ground, causing the faker to quickly snap his head around at the loud noise, proving that his neck was completely FINE! I LOVED that episode. How smart was that Mike Brady?

So yes, I have always wanted to expose a faker by throwing down a briefcase and catching him in the act.

I wish I was kidding you. It’s been an on-going dream since I was a kid. I am constantly looking for ways to incorporate an “A-HA! Caught ya” moment in my day.

Maybe that’s why I like Dateline NBC where they catch criminals “in the act”…it’s based in some deep-rooted, Brady Bunch crime solving, expose the bad guy, kind of issue I have.

Second, I have always thought it would be cool to run a marathon. Now I know this is never going to happen. I have tried running. It isn’t for me. I have found that I much prefer buying running shoes and exercise clothes than I actually like running or exercising. Apparently dressing like a runner is the closest I will ever get.

And third, I have always wanted to bake meringues. I will tell you, I had given up on meringue. After a few attempts and fails, I just decided it was one of those things that I couldn’t do, like pancakes or crepes.

THEN I got this sweet cookbook in the mail. My friend Heather wrote it and it’s simply stunning.

She asked if I wanted to give one away and of course I said yes, more on that in a bit.

I decided I wanted to attempt one of Heather’s recipes to post along with the giveaway, and when I saw her recipe for Meringue I knew it was my shot.

I may not be running a marathon, or exposing criminals in my spare time, but meringue? That’s something I could conquer.

Let’s get started.

I decided to give the recipe a eensy variation. Just a tiny addition.

Here’s what I added:

And what’s so great about Heather’s recipe is that it’s so open to variation. It’s just a great basic meringue recipe that you can build on and adapt. Love that.

I used a large star tip in a piping bag, but if you don’t have one don’t worry…just snip off the corner of a ziplock or piping bag.

They will look like this when they are done…they look exactly the same as they did when they went on the oven, but are dry and hard.

Description

This Cotton Candy Meringues Recipe is perfect for every sweet tooth! These colorful treats are so cute, simple, and couldn’t be easier to make with just 4 ingredients!

Ingredients

  • 2 egg whites
  • Pinch of Cream of Tartar
  • 1/2 cup superfine sugar
  • Duncan Hines Cotton Candy Flavor Packet

Instructions

  1. Preheat oven to 170°
  2. Line two cookie sheets with parchment paper. Fit a large piping bag with a star tip.
  3. Place the egg whites in a “spotlessly” clean mixing bowl and whip them with an electric mixer on medium speed until frothy.
  4. Stop the mixer and add cream of tartar. Start mixer again and continue to beat the egg whites until soft peaks form.
  5. Increase speed to high and gradually add in sugar *this is where I added the flavor packet as well
  6. Beat egg whites until they are shiny and hold stiff peaks but are not dry or crumbly, about 7 minutes.
  7. Make sure the sugar is dissolved by rubbing a tiny bit of meringue between fingers. If you feel granules of sugar continue to beat until all sugar has dissolved.
  8. Spoon the meringue into the piping bag and pipe onto prepared baking sheets.
  9. Bake the meringues for 90 minutes turning them halfway through baking.
  10. When meringues are done, turn off oven and let them stand for several hours or overnight. The meringues should be hard and dry to touch and you should be able to easily lift them from parchment.

The only adaptation I made to Heather’s recipe was the addition of the flavor packet.
