Delicious healthy oatmeal cookies with chocolate chips, tahini and honey. Another tasteful and easy recipe from Akis Petretzikis. These oatmeal cookies are chewy and are a little bit bigger than a bite-size cookie. They are the perfect healthy dessert for your and especially for your kids. They have only 3 basic ingredients (oat flakes. tahini and honey) and you can enhance them with whatever you like! In this recipe I chose cinnamon and dark chocolate chips, but you can add in these cookies anything you or your kids like: various kind of chocolate chips, raisins, dried cranberries, shredded coconut or nuts. Moreover, the best with these cookies is that they are super easy and quick to make. 20' after you decide to make the cookies, you will end up with 16 medium-size super delicious and healthy cookies.

The basic ingredients for these oatmeal cookies are oat flakes, tahini, honey, ground cinnamon and I prefer to add dark chocolate chips. Tahini is sesame seeds butter that is very common in greek cuisine and it has many health benefits. If it is difficult for you to find tahini you can substitute it with peanut butter, almond butter or any nut butter. Moreover, honey can be substituted with maple syrup if you want. I prefer to use good quality of organic ceylon cinnamon powder, since it's taste is pure and strong. I love chocolate, and especially bitter chocolate, so I usually add dark chocolate chips when I make these cookies, but feel free to substitute them with milk or white chocolate chips, mix of chocolate chips, raisins, dried cranberries, shredded coconut or finely chopped nuts.

These cookies are super easy to make. First of all preheat the oven in 180°C (350 °F) fan forced and line two baking sheets with parchment paper. Then just add all the ingredients in a bowl and mix them well using a spatula. You can let your kids even do it! If you decided to make this recipe along with your kids feel free to make your hands dirty and form along with your kids small balls with the dough. Then place them on the prepared baking sheets and flatten them gently with your hands. If you are making the recipe without the company of your kids and you do not want to get your hands dirty follow the next step.

If you do not want to get your hands dirty, transfer the oat mixture with the help of a rubber spatula on a plastic wrap, trying to give the cookie dough an elongated shape. Then cover the dough with the plastic wrap and shape a cylinder with the wrapped dough. Afterwards transfer the wrapped dough into the freezer and let it cool and firm for 5'. When the batter is firm enough, remove it from the freezer, unwrap it and cut it in disks with thickness about 2cm (25/32''). Transfer each cookie to the prepared baking sheets and flatten each one of them with your hands. Keep in mind that as the cookies are baking they flatten a little bit.

Transfer to the preheated oven and bake for 10'. The cookies are ready when they have golden brown edges but are still soft in the middle. Let them cool on the baking sheets for 2' and then transfer on a wire rack to cool completely. Be careful when transferring the warm cookies on the wire rack. because they are still very soft and they may break.

Enjoy the super healthy oatmeal cookies as a quick breakfast, a healthy snack with your coffee or as a dessert for your afternoon tea. They are a little big bigger than a bite-size cookie and since they are very healthy you can enjoy them with no guilts at all. And of course they are the perfect dessert and snack for kids, they will love them for sure! I suggest to make from scratch a double batch, because in my family these cookies get disappeared few hours after making them! Store the cookies in an airtight container at room temperature for 2-3 days. Try them out and enjoy!

  • 120 gr oat flakes

  • 100 gr tahini

  • 120 gr honey

  • 1/2 tsp ground cinnamon

  • 50 gr dark chocolate chips

Instructions

  • Preheat the oven in 180°C (350 °F) fan forced. Line a baking sheet with parchment paper.

  • Mix all the ingredients in a bowl using a spatula.

  • Transfer the cookie dough to a plastic wrap, close it around the dough and make a cylinder with it without having your hands to get dirty.

  • Transfer the wrapped dough in the freezer to firm and chill for 5'.

  • After removing the dough from the freezer, unwrap it and cut discs of thickness 2cm (25/32''). Do not worry if the dough is tearing apart, just press it gently with your hands to make it come together. You can form the cookies to whatever shape you want, but keep in mind that the cookies will flatten a little bit while baking.

  • Bake for 10'. The cookies are ready when they have golden brown edges but are still soft in the middle.

  • Let them cool for 2' in the baking sheet and then transfer them gently to a wire rack (be careful, they are still very soft) to cool completely and enjoy! As they cool down they become harder, but still they remain chewy.

  • Store the cookies in an airtight container at room temperature for 2-3 days

    Notes

  • You can substitute the dark chocolate chips with whatever you like: milk or white chocolate chips. raisins, dried cranberries, shredded coconut or finely chopped nuts.
