well, to be honest, i generally avoid making any peanut-based recipes in my blog, due to the allergies some may have on peanuts. yet i posted this recipe, for a couple of reasons. the first one is due to the fact that i was getting several requests to make simple and easy sundal recipe. the challenging part of selecting a hero ingredient for sundal is that it can be made with myriad options. i chose peanut, as it would strike a balance between my both south india and north indian readers. the other reason to select the groundnut sundal is the use of it. it can be made for any festival celebrations and served as prasadam. in addition to it, it can also be made as a side dish or as an evening snack and can be served with a cup of tea or coffee. well, there are many such practical benefits of this recipe and hence i felt it is worthwhile sharing it with video.

furthermore, i would like to add some tips, suggestions and variations to a perfect peanut sundal recipe. firstly, in this recipe, i have begun the cooking process by soaking the store-bought peanuts with skin. alternatively, you can skip the soaking process if you have access to fresh and tender groundnuts. it would be moist and a perfect ingredient for this sundal. secondly, you can follow the same cooking process to make other variety of sundal recipe. particularly, you can use the same recipe for chickpeas, black channa, kollu and even cashew nut based sundal. lastly, if you are planning to make it as a side dish to sambar rice or rasam rice, make it more spicy and savoury in taste.

Ingredients

for pressure cooking:

  • cup peanuts
  • water, for soaking
  • ¾ cup water, for pressure cooking
  • ¾ tsp salt

for sundal:

  • 3 tsp oil
  • 1 tsp mustard
  • 1 tsp urad dal
  • pinch hing / asafoetida
  • 2 dried red chilli, broken
  • few curry leaves
  • 1 inch ginger, finely chopped
  • ¼ tsp salt
  • 3 tbsp coconut, grated

Instructions

  • firstly, in a large bowl take 1½ cup peanuts and soak in enough water for 2 hours. you can skip soaking step if you are using fresh peanuts.

  • drain off the water and transfer to the pressure cooker.

  • add¾ cup water and¾ tsp salt.

  • pressure cook for 3 whistles or until the peanuts are softened.

  • drain off the water and keep aside.

  • in a large kadai heat3 tsp oil and splutter 1 tsp mustard, 1 tsp urad dal, pinch hing,2 dried red chilli and few curry leaves.

  • add1 inch ginger and saute slightly.

  • further, add in boiled peanuts and ¼ tsp salt. saute for a minute.

  • now add3 tbsp coconut and mix well until flavours are absorbed.

  • finally, enjoy peanut sundal immediately or serve for prasadam.
