2 ozred wine
1/2ozbourbon
1/2ozsimple syrup
1large round ice sphere
3gourmet maraschino cherries

The general guideline is two parts whiskey to one part vermouth with two to three dashes of bitters. You can go up to three parts to one and add a couple more dashes, at your own risk, and no one will judge you ... too much.
Nothing wrong with Angostura, although other brands have a bit more character. My two essentials, which I swap according to mood, are Regan's Orange Number Five Bitters and Fee Brothers' Whiskey Barrel Aged Bitters.
Get a perfectly flavor-balanced co*cktail with the bartender's golden ratio of 2:1:1. That means, 2 parts spirit, 1 part sweet, and 1 part sour. First, you'll begin with 2 parts of your spirit of choice: vodka, gin, rum – what have you. Secondly, add that to a mixing tin with ice.
Both co*cktails call for whisky and Angostura bitters, but the defining factor lies in their sweetening agents. The Old Fashioned opts for straightforward sugar or syrup, helping to soften the whisky.In contrast the Manhattan favours a sweet vermouth – adding fruity and caramel flavours into the mix.
A typical dash of bitters is generally considered to be about 1/8th of a teaspoon or less than that. In other words, it's just a small amount. Liquids used in recipes for cooking and co*cktails are usually measured in fluid ounces.
Measured out in drops, using a precise, milliliter-dropper like the ones used to dispense medicine, a dash is about 10 single drops. Measured out in teaspoons, a dash would be 1/5 teaspoon, or as I discovered in my kitchen, between 1/8th teaspoon and 1/4 teaspoon.
They're rarely served straight because the flavors are much more intense than digestifs. Some of the best co*cktail bitters available are Angostura, Regans' Orange, Peychaud's, Bittermens, and The Bitter Truth.
In 1870, Siegert's three sons migrated to Trinidad and established the bitters as an essential ingredient in co*cktails and food. With four bitters variations: Aromatic Bitters, Orange Bitters, Cocoa Bitters, and Amaro Di Angostura, Angostura is a staple for bartenders and professional and home cooks.

Almost all the classic drinks you know and love, from the Daiquiri to the Gimlet or the Margarita come down to the same basic ratio: 2:1:1. That's two parts spirit, one part sweet, and one part sour, commonly known as the Golden Ratio.
But while quinine is interesting as a reference bitter, there are certainly other sources of bitterness in co*cktails. One of the most prevalent is spirits aged in new wood barrels, such as Bourbon or Cognac. The bitter compounds in new wood (tannins and phenols mainly) leach into the spirit, which also slowly oxidizes.
For a classic Manhattan, we want to use “sweet” vermouth, which actually isn't all that sweet. Sweet vermouths are dark red or brown, not clear. My favorite options are Dolin and Carpano Antica. Dolin is the softer and smoother of the two, which is not to say that it's boring.
The Rob Roy is, quite simply, a Scotch Manhattan. Whereas a Manhattan includes an American whiskey like rye or bourbon, a Rob Roy features a Scotch whisky. In keeping with the Manhattan recipe, the Rob Roy simply pairs your favorite Scotch with sweet vermouth and a dash or two of bitters.
Most recipes will call for a few dashes, this does not mean a few drops, it does indeed mean a few shakes into your co*cktail. You'll most likely be adding anywhere from ½ to a full teaspoon of bitters. If you're using a bottle with a dropper cap, remember that a couple of drops make a dash.
The Dry Manhattan used dry vermouth instead of sweet. The Medium Manhattan was the original Perfect Manhattan, made with four parts whiskey and one part each dry and sweet vermouth.
What if a co*cktail recipe calls for 3 dashes of bitters? Technically speaking, this would be 0.09 oz or about 1/4 + 1/8 of a teaspoon. Non-technically speaking, this could be 3 simple tilts of the bottle or 3 quick thrusts of the bottle.
Many classic co*cktails, like the Old Fashioned and Manhattan, call for a dash or two of Angostura to add bitterness and spice. A dash is anywhere between ⅛ and ¼ of a teaspoon. Be careful not to add too much as the bitters are strong in flavor and could overwhelm your co*cktail.
