This Thermomix made Sweet Chilli with Cashew & Parmesan Chunky Dip has to be one of my all time favourites as it can be made in under 3 minutes! :)
It's great to have on a Saturday afternoon once the yard has been manicured and you're sitting down with the family enjoying a glass of wine!
ThermoFun – Sweet Chilli with Cashew & Parmesan Chunky Dip Recipe

Ingredients
- 1 garlic clove, peeled
- 35g parmesan cheese, cubed.
- 100g cashews, raw, unsalted
- 1 red capsicum (approx.120g) quartered
- 80g sun-dried tomatoes
- 20g white vinegar
- 30g olive oil
- 25g ThermoFun Sweet Chilli Sauce
- pinch of salt
- mixed dried herbs, generous sprinkle
Instructions
- Place all ingredients into TM bowl and chop 1 sec / Turbo.
- Scrape down and repeat until desired consistency.
- Enjoy dip with crackers!
Notes
* The cashews can be substituted with a mix of sunflower seeds and pepitas.
* This dip freezes well.

One of my favourite dips, I also add 2-3 fresh chillies and extra Parmesan. I always have some in the freezer just in case. Thanks Leonie.

This dip is another favourite in our household. It freezes so well that I try to make double and keep some in the freezer for unexpected visitors or that Saturday or Sunday afternoon when you have been working in the garden and want to relax on the deck with a drink and some nibblies.

how long would this dip last in the fridge? Want to make for a party and trying to prepare as much as possible in advance.

Gail I have frozen this dip successfully. In fact I yet to find a dip that doesn't freeze well! :)
It would last in the fridge at a guess for 4-5 days.Reply

This dip was delish. I used slightly less vinegar and added some feta. Kids loved it. Even my daughter who does not like tomatoes. Everyone kept asking for more.

Oops! Yes 70 grams. Counting 70 would be very messy!! No sleep for 36 hours could be the problem there!!
